The journey with pizza began long before stepping into a professional kitchen. Growing up in Italy, Friday nights were sacred — not for what was on TV, but for what came out of the oven. It was a family ritual: pizza dough preparation started on Wednesday evening, rising slowly over 48 hours. By Friday night, the kitchen turned into a place of joy, laughter, and irresistible aromas. Pizza wasn’t just dinner. It was magic. It was family.
The art of pizza was learned from his father, starting with traditional wood-fired ovens, including the old, beloved wood oven still kept at home. Over time, the craft was perfected using high-quality electric ovens. Friday night competitions — who made the better dough, who achieved the tallest cornicione — became memories to cherish forever. In Italy, the cornicione is sacred, a belief carried into every pizza made.
In 2007 came the first professional experience in a pizzeria near Chamonix, France. That adventure, followed by time working as a pizzaiolo in New Zealand during a sabbatical year, deepened passion and skill. Despite a successful career in sales management, built on an academic background in Economics, first within a major IT distribution company and later in Italy’s heavy industry components sector, the call of the pizza oven was always present. Pizza was never just food. It was connection. A language that needs no translation.
In 2022, everything was left behind to follow that dream to Australia. With passion, experience, and a love for sharing this craft, The Cheesy One Pizzeria was opened in Brisbane — a place where authentic Italian pizza meets the laid-back magic of Australia. Every dough is still made with the same care as in childhood. Every pizza is a celebration. Because pizza is for everyone, and everyone deserves to taste the real thing.

We do everything by hand, just like we did back home. Our dough rises for over 48 hours, each pizza is crafted with skill and intention, and every bake is guided by expert hands — never by conveyor belts. We bring artisanal techniques and elevated oven mastery to every order.
We’ve introduced unique Italian flavors to Brisbane — from pizzas inspired by the culinary traditions of Vicenza, to calzoni and our signature 18-inch Maxi pizzas — pioneering tastes and formats the local market had never seen before.
